Lunch!


Look at this beautiful salad composed of romaine lettuce, cucumber, tomato, red pepper and an amazing dressing. Amber and I are making fresh, single servings of dressing each time we have a salad. This is easy to do when using a "magic bullet" type appliance. Notice the raw cashews in the recipe; this adds wonderful protein and makes for a thick, rich dressing. Interestingly, this was the first dressing recipe Amber tried and remains top dog after trying several different ones.
Raw Lemon Dill Dressing
1/4 cup lemon juice
1/4 avocado
1/2 cup water
1/4 teaspoon salt
1 tablespoon fresh dill
Pinch pepper
1/2 cup raw cashews

For breakfast I created a simple but yummy salad of grated apple, raisins and walnuts. This felt kind of like a logical combination, but I took pleasure in choosing the ingredients, prepping them and tossing them together. When devouring this, I felt this could easily be a "dessert" as it was so good. It was a GREAT start!

Day One of eating raw

So. Here I am. Day one. It's taken me a few days - five to be exact - to count the cost and decide to bite the bullet and claim my first day. This was hard. Seriously. I mean I am prone to healthy eating; I love to read about it and implement new things in this area. However, I have never, ever been drawn to eat raw. It seems like a much bigger step.

So why am I doing it? Well for a couple weeks I have been making sure that I incorporate some raw food every day. I had read some article that reminded me of the importance of eating raw foods because they hold much more nutrition uncooked. I started to encourage my family to make some raw choices as well. I had gotten particularly "hooked" on raw cauliflower with Catalina dressing (Denisha's favorite salad with cauliflower, onion and Catalina inspired it), and after some prodding - Amber tried it and got hooked, too. Several days after that Amber woke up one morning and announced that she was going raw.

Honestly, I was at a loss for words for a moment as I tried to process through in my mind what Amber possibly meant by saying she was "going raw". Did she mean sleep in the raw? That's the only thing I could think of that was logical. She quickly let me know that she was taking the plunge to eat only raw foods. She jumped in with both feet the first day. She's already on day six of the adventure and done amazing. Therefore, Amber's choice to eat raw, was the initiating factor for me to find myself at the end of day one of my raw journey.
